Ingredients 2 sweet potatoes, peeled
1 red onion
1 green chilli
beef mince (500g)
3 tbsp of Jerk seasoning
2 tbsp of desiccated coconut
1 egg, beaten
1 lime, zested
a glug of oil
4 floury burger buns, toasted
4 pineapple slices (½ a tin)
a handful of baby spinach
2 tbsp of soured cream
Recipe preheat the oven to 180°C.
slice the sweet potatoes into chips, drizzle with oil, salt and pepper then bake on a tray for about 30 minutes so that the chips are cooked.
peel and finely dice the red onion and green chilli.
put the beef mince in a bowl with the red onion, chilli, jerk seasoning, desiccated coconut, egg, lime zest and seasoning.
divide the beef mix into 4 and mould the mix into burger shapes.
fry in an ovenproof pan with a drop of oil until one side of the burger is golden, turn over and put in the oven until the burger is cooked. This will take about 10 minutes.
spread the bottom of a bun with sour cream and top with spinach and a pineapple slice then top with a cooked burger and add the lid to the bun.
serve the pattie with the sweet potato chips.
